Instructions

Wash meat and soak it in milk leaving it sit for 2 hours, occasionally puncturing with a long toothpick.

Take a casserole whose flesh does not exceed 2/3 capacity, cold place the meat with milk flavoured by Rosemary, a little tarragon, a grated nutmeg, salt and pepper.

Bring to the boil, cover with the lid and cook for 20 minutes, uncover and color rigirandola in meat broth that is thickened.
