Spinach Soup (Minestrina di Spinaci)
Instructions
Well I clean some fresh spinach leaves.
Sbuccio a potato.
Put spinach and potato in a pot with cold water (about a third of a litre) and let boil, say a 30-45 minutes.
Halfway through the cooking I add a tablespoon of cornstarch and a pinch of salt.
When it is cooked, remove from heat, let cool and way to garbage disposals.
I add a teaspoon of olive oil extra virgin and stir.
