Lemon mousse
Instructions
Grate the rind of the lemons.
spremeteli, strain the juice and pour it in a pan with the sugar.
Let simmer 10 minutes.
Remove from heat, add gelatin, softened and squeezed.
Whip egg whites until foamy, pour over, flush, boiling syrup stirring with a whisk.
Continue to stir until the mixture cools.
Add the grated Peel and whipped cream.
Pour the mixture into a mold lined with greaseproof paper and keep in the fridge for three hours.
Drafted and decorated with fresh fruit.

- 2 lemons
- 3 egg whites
- 3 sheets gelatine of (pages from 15 g)
- 75 cl of whipping cream
- 160 g of sugar
