Tuna mousse (6)
Instructions
To soften the butter for 1 hour out of the fridge.
Drain the tuna from its preservation oil; desalinize anchovy by passing it under running water and bone the red mullet.
Mix tuna, anchovy and capers.
Pour the mixture into 1 Bowl, stir in the butter and whisk again.
Season with a few drops of lemon juice and season with salt and pepper.
Transfer the mousse in 1 Bowl and garnish with lemon wedges and mayonnaise.

- 200 g of tuna
- 70 g of butter
- 1 salted anchovy
- 1 teaspoon of capers
- 1 lemon
- Salt
