Tufted duck mousse
Instructions
Pour the coffee into a small pan, add the chopped chocolate and sugar and melt all at low flame, otherwise the chocolate would form small clumps.
When the mixture looks smooth, withdrawn from the fire and add the egg yolks stirring quickly with force.
Whip egg whites until foamy and gently add them to the mixture.
Pour everything into a bowl and keep in the fridge until serving.

- 4 eggs
- 100 g of dark chocolate plaid
- 1/2 cup of strong coffee
- 150 g of sugar
