Coconut chicken
Instructions
Heat 6 tablespoons of vegetable oil in the pan.
Pass the chicken breasts in the flour to cover them entirely and fry them in oil until they become Golden.
remove from heat and let them dry on paper towels.
Mix the curry powder with 2 tablespoons oil, add leeks and garlic and saute.
Peel the potatoes and cut them into cubes; FRY in oil until chicken gilding and let them dry on paper towels.
Remove the oil and put in the pan the chicken with potatoes, leeks and garlic.
Stir in the milk, chicken broth, salt and coconut juice and pour the sauce over the chicken.
Cover and simmer for 35-45 minutes.
Serve hot.
