Provencal chicken
Instructions
Brown the chicken.
Add the shredded onion and garlic.
Add the peppers, eggplants and tomatoes (all cut to pieces rather big).
Season with salt and pepper.
Add the herbs and cover.
Bake for 30 minutes.

- 1 chicken cut into 8 pieces
- 500 g of eggplant
- 500 g of ripe tomatoes
- 2 green peppers
- 1 onion
- 2 cloves of garlic
- Salt
- Pepper
- Thyme
- Rosemary
- Oregano
