Charcutière sauce
Instructions
Saute the onion in lard; pour in the wine and let reduce by half.
Add demi-glace sauce and boil for a few seconds.
Out of the fire finish the sauce with the gherkins and mustard; stir carefully.
Ideal for pork meat cooked on the grill.
Ingredients and dosing for 4 persons
- 20 cl of demi-glace sauce
- 10 cl of dry white wine
- 2 tablespoons of lard
- 2 tablespoons of chopped onion
- 2 tablespoons of pickles cold cuts
- 20 g of sweet mustard
