Sole with melted butter
Instructions
Eviscerated the soles, remove their black skin, broken the plug in several places.
Keep them soaked in milk for at least a quarter of an hour, dry, then lightly flour them.
In a saucepan heat the butter, lay the sole Cook and not focus too live about 5 minutes per side or more according to size.
Must take on a golden colour and soft inside out.
Only add salt when cooked.
In a pan melt in Bain-Marie light butter and when it starts to froth pour it on the sole place on serving dish.
Serve warm at the table immediately.
