Lime sorbet
Instructions
Cook over low heat 250 ml of water with the sugar and the zest for 10 minutes.
Stir the syrup obtained with the lime juice and the remaining water, pour the mixture into an ice cream maker (without putting the mixture in the freezer, mixing it every hour until it is curdled).
Shortly before the sorbet is ready join the snow mounted albumen.
Serve with fruit pieces.

- 250 g of lime juice
- 190 g of sugar
- 56 cl of water
- 1 egg whites
- == 1 Lime (zest)
- Mixed fruit
