Soufflé of befana
Instructions
Coarsely chop the chocolate and melt it in a Bain-Marie, covered.
Add coffee and egg whites very firm with a pinch of salt.
Let stand for 10 minutes.
Whip the cream with the sugar and blend it with the chocolate mixture.
Distribute in 4 individual cups and keep in the fridge for at least 1 hour.
Before serving, Garnish each cup with a marron glacé.

- 150 g of chocolate
- 150 g of whipping cream
- 2 egg whites
- 2 teaspoons of sugar
- 1 cup of strong coffee
- 1 pinch of salt
- 4 marrons glacés
