Spinach with bamboo shoots
Instructions
Clean the spinach, remove stems, wash them thoroughly and drain them.
If you are using dried Chinese mushrooms, bring to a boil in a small saucepan of water; put the mushrooms in a bowl, wet your hair with boiling water and let them soak for 30 minutes; drain them and rinse under running water, strizzateli, remove the stems and cut the heads into thin slices.
Heat oil in a wok or a large frying pan, throw yourself through switch mushrooms and bamboo shoots, you blast lively focus for a minute, stirring.
Add spinach and simmer for two or three minutes.
Add sugar, salt, wet with the mirin or sherry and water mixture, stir for a minute.
Drain the preparation with a skimmer and pour into a container.
Serve immediately.

- 500 g of spinach
- 4 dried chinese mushrooms
- 4 tablespoons of peanut oil
- 1 teaspoon of sugar
- 2 tablespoons of mirin (or half of sherry)
- 1 tablespoon of water
- Salt
