Frothy mascarpone with chocolate
Instructions
Put on the fire with sugar 10 cl of water, add the cocoa and cook stirring.
Remove from heat when it is hot, add the egg yolks all at once.
Stir continuously until the mixture has cooled down.
Mount separately the egg whites and the cream and stir the mixture cooled down before the egg whites and cream.
Allow to cool in the freezer before serving.

- 200 g of sugar
- 25 cl of creme fraiche
- 4 eggs
- 40 g of cocoa powder
