Syrniki (Cheese fritters)
Instructions
4 cups ricotta cheese working with 4 egg yolks, 40 g sugar, 75 g of sifted white flour and a pinch of salt.
When everything is well mixed divide the mixture into 4 parts and each part a 8 cm long cylinder.
Go to the refrigerator for 40 minutes.
Then cut each roll into 4 equal pieces and fry the pancakes made in warm butter.
When they are golden brown on both sides pass them on absorbent paper and then spolverizzarle with icing sugar.
