Instructions
Peel the chestnuts and boil them in lightly salted water.
After being drained, remove the skin and pass through a food mill into a fine puree that you will put into a bowl.
In another bowl beat the egg yolks with sugar, add the chopped butter, mashed chestnuts, almonds and grated lemon rind.
Separately, whip the egg whites until foamy soda and then to the mixture a little at a time.
Lightly grease and flour a pan, pour in the mixture, level it and passed to the hot oven for 40 minutes.
Check the doneness by inserting a toothpick in the cake: must be dry.
Let cool and baked, then served.
