Put in pan a layer of onions cut into thin slices.
On this basis, place the meat with strips of pancetta steccata and not add more seasoning.
Cook in covered container and at very low heat for four hours.
Occasionally stir the onions should not attack.
After an hour turns the meat, adding salt, pepatela.
When thoroughly cooked, cut the meat into slices, dowse with onion sauce and serve.
