The mint frittata
Instructions
Beat the eggs with salt, pepper, bread crumbs, pecorino cheese, chopped Mint.
Heat the oil in the proper place in a pan and pour the mixture, cooking it from both sides.
Serve the omelette over a bed of fresh Mixed Greens.
