Apple sauce (salsa di mela)

00211 APPLE SAUCE INGREDIENTS 4 PEOPLE 250 g Green Apple peels, 1 glass of white wine, 1/2 lemon, 1 inch cinnamon stick, 2 cloves, 1 onion, 1/2 tablespoons butter.
PROCEEDINGS Wash well the Apple peels and put them in a saucepan with the wine and 1 cup of water.
Add the cinnamon, cloves, the peel of 1/2 lemon, washed well and bring to a boil.
Lower the heat, cover the pan with the lid and cook for 25 minutes.
Let evaporate the residual liquid, cooking 5 minutes lively flame until the mixture is well dry, then passed the skins are cooked through vegetable mill, after clearing the cinnamon, cloves and lemon peel.
Peeled half onion, wash it and cut it into very thin slices with a very sharp knife.
Brown 2 minutes into the melted butter, stirring with a wooden spoon, add 1/2 water ladle and let it consume over a medium heat for 15 minutes.
Add the sauteed onion to the Apple puree, cook 3 minutes on medium flame and pour everything in the Blender jar, add the juice of 1/2 lemon.
Blend one minute until the sauce is perfectly smooth.
Serve the sauce warm or cold, as an accompaniment to grilled or roasted meats.
