ingredients for 4 people

1 cotechino about 300 g, 150 g of dried lentils 2 tablespoons olive oil, 40 g of bacon, 1 small onion, 8 slices of sliced bread, 2 tablespoons butter, salt and pepper.

Put the lentils to soak for 12 hours in cold water; rinse, then pour into a pan in which you browned the chopped onion with oil. Cover with hot water. Put the lid on and cook on moderate heat for 20 minutes, add salt and pepper.

Prick the sausages with a fork, put it in a pan covered with cold water and cook over low heat for 70 minutes, then drain them, spellatelo, let it cool, and cut into thin slices.

With a round cookie cutters cut two from each slice of toasted sliced bread; do Brown the slices in the oven already warm (180°) for three minutes; put the lentils, place slices on each the cotechino and served with a ground pepper.
