Instructions

INGREDIENTS for 4 people: a pack of frozen cod fillets 400 g, 150 g of fish shrimp, 6 eggs, a bottle of tomato sauce, butter, salt and pepper for the salsa: a glass of cream, a glass of cognac, 2 onions, 1 tablespoon butter, salt and pepper, remove the skin and bones from the fish and cook with cod fillets and shrimps peeled (heads) in tomato sauce.

When cooked, remove the fish from the Pan, break it into small pieces and keep aside.

Let reduce over high heat the tomato sauce then mix with fish and eggs, flavored with salt and pepper.

Generously grease a rectangular mold and lined the bottom with greaseproof paper, pour the preparation of fish and cook in the oven in a Bain-Marie.

Serve the fish Pudding with the sauce.

Sauce: sauté the chopped shallots in butter, add the shrimp heads and cook for a few minutes, fiammeggiate with cognac, add the cream and cook over low heat to reduce it a little, then take away the heads of shrimps and pour the sauce into gravy boat.
