Cauliflower fritters with aurora sauce

05224 CAULIFLOWER FRITTERS with AURORA SAUCE INGREDIENTS for 4 PERSONS a cauliflower, 1/2 l of milk.
2 tablespoons full of flour, 2 tablespoons of butter, salt, pepper, nutmeg, tomato sauce, 125 g flour, 70 ml of beer, 1 tablespoon oil, 2 egg whites, salt.
Place the flour in a bowl, put a pinch of salt and oil, add little by little beer and 100 ml of water, stirring well.
Mix thoroughly with a whisk and let stand for 3 hours.
Cook cauliflower divided into tops in boiling salted water for 15 minutes; drain it.
Whip the egg whites until foamy, and blend the batter for frying.
Passed the peaks of cauliflower into the batter and fry them in plenty of hot oil.
For the sauce: prepare a béchamel sauce with milk, 2 tablespoons of flour and butter, season with salt, pepper and nutmeg and add to tomato sauce and stir well.
Serve the cauliflower with aurora sauce.
