Duet of salmon

07975 DUET of SALMON for 4 PERSONS INGREDIENTS 4 fresh salmon fillets (200 g each), 8 small slices of smoked salmon, 12 lettuce leaves, spinach and common wood sorrel, 8 basil leaves, 75 g butter, 3 dl of fresh cream, 6 tablespoons dry white wine, a bunch of chopped chives, 2 knurled nuts for fish broth, salt and pepper.
Heat the oven to 200° Cut the salmon fillets on the side and open them to fill later.
Cover them with slices of smoked salmon.
Cut the leaves of lettuce, spinach and common wood sorrel and slightly brown for 2 minutes in 20 g of butter, add 4 teaspoons of this mixture and cream stuffed fillets.
Close, place fillets on aluminum foil, add 5 g of butter and cover them very well.
Put the? packages? in a pan, add a little water and cook 15 minutes in a hot oven.
For the sauce: place a saucepan on the stove, pour the wine and let it reduce by half, lively focus, add the chives, the rest of the cream and bring to a boil.
Add the nuts for the fish stock and simmer over low heat for 5 minutes, add the rest of the butter into pieces.
Add salt and pepper.
Put the fillets surrounded by steamed potatoes and serve the sauce separately.
