Instructions

00299 TOASTED PUMPKIN MOUSSE INGREDIENTS for 4 PEOPLE 500 g pumpkin, 100 g grated Grana Padano cheese, 2 eggs, 100 g of whipped cream, 4 Tablespoons extra virgin olive oil, a sprig of Rosemary, 1/2 glass of white wine, 1 garlic clove, salt, nutmeg, gather up the flesh of the pumpkin, wash it and cut it into small pieces. In a Pan fry the crushed garlic and browned add the pumpkin and Rosemary. Let season to open flame stirring constantly. Wet with wine and simmer for about 20 minutes over low heat, covered container. When cooked the pumpkin puree in a blender. Pour into a bowl and add the egg yolks, Grana Padano and flavored with nutmeg and add salt. Apart from whip the cream and gently add the pumpkin puree. Pour the mixture into a terrinetta and store in the refrigerator for a few hours. Serve with croutons and walnuts.
