Flan potatoes with cheese and walnuts

01620 POTATO PUDDING with cheese and walnuts INGREDIENTS for 4 PERSONS 800 g of potatoes floury white paste, a dl of milk, 30 g of butter, a tablespoon of grated Parmesan cheese, 2 eggs, 100 g cheese from the mountains (Montasio cheese, Fontina, Taleggio or other flavorful cheese, smoked) 8 Walnut kernels, salt, pepper, nutmeg, dried breadcrumbs.
Peel the potatoes, wash them and cut them into pieces.
Put them in a saucepan with a tablespoon of salt and cover with cold water.
Bring to the boil and simmer until the potatoes are tender, then drain and let stand for a few minutes.
Meanwhile do cool the milk in a saucepan.
Pass the potatoes through a ricer or food mill directly over the saucepan of milk, add the butter in flakes, lasciatene a small amount that will serve to grease the mould, the Parmesan cheese and the beaten eggs.
Stir very well to mix everything.
