02122 RICE SALAD with shrimp and TOMATOES INGREDIENTS 4 PEOPLE 300 g of rice, 400 g of prawns, 1 pack of frozen peas, 1 kg red tomatoes for the sauce, 3 tablespoons chopped fresh basil, extra virgin olive oil, salt.
PROCEDURE Boil the rice in salted water for 15 minutes, drain.
Fry the shrimp in a little oil, sgusciateli and cut them to pieces.
Pass the tomatoes through a food mill, decorate with oil, season with salt and basil.
Stir the tomato sauce with boiled rice and shrimp.
