Rice salad with smoked salmon
Instructions
02446 RICE SALAD to SMOKED SALMON INGREDIENTS for 4 PEOPLE 200 g basmati rice, pink grapefruit, 1 1/2 fresh coconut, 1 box of heart of Palm, 4 slices of smoked salmon, 1 lemon, 2 ripe avocados, grated celeriac for decoration.
For the mayonnaise: 1 lemon, 1 egg yolk, 1 tablespoon of mustard with green pepper, oil 10 cl d? peanuts, cayenne pepper, salt.
Cook the rice in salted water, when cooked, drain and allow to cool.
Peel the grapefruit, separate the cloves and remove all white filaments.
Peel the coconut pulp and grattugiatene.
Drain the palm heart and cut into large chunks.
Cut the slices of salmon to nuts.
Squeeze the lemon, peeled avocados and cut into two to rattle off: cut the flesh into cubes.
Decorate with lemon juice to prevent them from becoming black.
For the mayonnaise: squeeze the lemon.
In a bowl beat the egg yolks together with the mustard and add, little by little, oil, salt, pepper, lemon juice and chopped parsley.
In a bowl, pour the rice, all the ingredients prepared and mayonnaise and mix well.
Sprinkle with grated celeriac and serve.
