Ostrich scallops with mustard sauce and herbs

2_09320 OSTRICH SCALLOPS with MUSTARD SAUCE and HERBS INGREDIENTS for 4 PEOPLE 4 scallops, ostrich, a nut, 4 tablespoons strong mustard, 1 tablespoon chives scissors, a tablespoon of chopped tarragon, a tablespoon of olive oil, salt and pepper.
Heat oil in a pan and let cook 3 minutes to hand the scaloppine of ostrich.
Add salt and pepper.
Add herbs, chopped nut, 300 ml water, mustard and simmer at moderate fire for 8 minutes.
When cooked, place the scaloppine in individual plates, drizzle with cooking and, if you wish, accompanied with mashed potatoes.
Serve.
