Minestrone Soup with pumpkin
Instructions
(Recipe from Lombardy) Remove the rind and pumpkin seeds, then cut it into small pieces. Place over heat a saucepan with salted water: just raise a boil add the pumpkin and allow it to Cook; When ready, drain and pass it through a sieve, dropping the past in a saucepan, add the milk and mix well, then put the pan on the fire to lift the boil.
Only then add chopped spaghetti; After cooking, remove the saucepan from heat, stir in butter soup (should be very fresh) and plenty of Parmesan cheese. Serve the hot soup.
