Crepes in exotic sauce
Instructions
Bring to the boil the orange juice and lime into a small saucepan and reduce by half.
Peel the guavas, cut into thin slices and put them in a pan with melted butter.
Sprinkle with two tablespoons of icing sugar and cook on moderate heat for 2-3 minutes.
Add the raspberries and the reduced juice of citrus fruits and remove the Pan from the fire.
Place the crepes in four individual dishes, farcitele with fruit and its cooking, piegatele in half and serve.
If you prefer a more traditional flavour and delicate, you can replace the guavas with oranges from the sweet pulp, using the same quality also for preparing the sauce.
The slices of oranges go without heat for a few seconds only, otherwise mushy during the thawing.
Finally garnish the crepes with a little whipped cream.

- 10 cl of orange juice
- == 1 Lime (juice)
- 40 g of sugar
- 2 guavas
- 20 g of butter
- 2 tablespoons of icing sugar
- 100 g of raspberries
- 4 crepes (crepes stuffed with v. mandarins)
