Crostoni with foam of hake
Instructions
Cut the hake into cubes and FRY in 3 tablespoons olive oil with the chopped onion, 1 garlic clove, diced small potatoes.
When all will be slightly browned, sprinkle with a finger, let it evaporate, then add the milk to cover the ingredients, salt and ground pepper.
With and simmer, moderate focus, until the milk is absorbed almost completely, then transferred the preparation in the blender and run the unit at maximum speed, so you get a foam.
Cut 12 slices of bread, toast them in the oven, rub with a clove of garlic, then guarnitele with the foam of hake and aromatic leaves (Chervil or parsley).
Serve immediately, with slices of crisp bread.

- 250 g of hake fillet without bones and skin
- 100 g of onion
- 100 g of potato
- 2 cloves of garlic
- shape = 1 = = Bread
- Dry white wine
- Milk
- 3 tablespoons of olive oil extra virgin
- Salt
- Minced 1 of peppercorns
- For garnishing:
- Some leaves of chervil (or parsley)
