Potato focaccia
Instructions
Boil potatoes and pass the potato masher.
Add the flour.
Meanwhile, melt the yeast in 1/2 glass of warm water with salt and stir in the oil, milk and salt.
Mix everything in a bowl, mix well all the ingredients and flour the bottom of another bowl.
Pour in the mixture and knock it with your hands until you obtain a loaf.
Draw a cross in the middle and let rise for 2 hours covered with a cotton cloth.
Grease a baking sheet of 30 cm in diameter, pour out the dough well with your hands.
Moisten the mixture and put evenly over the olives.
Set the oven to 200 degrees and, when it has reached temperature, bake the focaccia.
Simmer for 40 minutes, until it is nicely Golden.
Out of the oven, brush with vegetable oil and serve in slices.
Ingredients and dosing for 4 persons
- 1 200 g potatoes
- 400 g of flour
- 1/2 cup of peanut oil
- 1 square of brewer's yeast
- 2 teaspoons of not well refined salt
- 2 fingers of milk
- 1 bag of pitted olives
