The mushroom broth
Instructions
Clean the mushrooms and cut them into thin slices.
Saute the garlic in the butter, then add the mushrooms and simmer for 10 minutes.
Sprinkle with a little flour, stir well and remove garlic.
Add the broth and cook for 25 minutes.
Whisk half of the soup and put it back in the pot.
To return to a boil, then add the cream, thyme and stir.
Serve hot with croutons of bread fried in butter.
Ingredients and dosing for 4 persons
- 500 g of mushrooms
- 100 cl of vegetable broth
- 4 tablespoons of cream
- 1 clove of garlic
- Butter
- Thyme
- Salt
- Pepper
- Bread cut into small cubes
- Flour
