Instructions
Soak in warm water for 24 hours the lentils.
Do 1 Sauté 50 g of butter, onion, carrot and chopped celery.
Combine the tomatoes and cut into pieces.
To flavour.
Add the drained lentils.
After 10 minutes, add the broth, salt and pepper, bring to a boil and cook for 1 hour.
Pass through a sieve and add remaining butter.
If necessary, add a little more broth to get a cream of right consistency.
Serve with fried bread croutons and grated Parmesan.

- 400 g of lentils
- 120 g of butter
- 3 tomatoes
- Onion
- Carrot
- Celery
- 200 cl of meat broth
- Pepper
- Salt
- To serve:
- Some of fried bread croutons
- Grated parmesan cheese
