Sweet and sour zucchini
Instructions
Put soaked the raisins in warm water.
Dried pine nuts in the oven at moderate heat.
Sliced courgettes and fry them lively focus in a pan with two tablespoons of olive oil and a clove of garlic.
Lower the heat, add the raisins, pine nuts, pinch salt, half a cup of vinegar and half a tablespoon of sugar.
Stir it and after a few minutes add the anchovies, water, de-boned and fragmented.
Let season again for 5-10 minutes and serve warm.

- 6 zucchini
- 30 g of sultanas
- 20 g of pine nuts
- 2 salted anchovies
- 1/2 tablespoon of sugar
- 1/2 cup of wine vinegar
- 1 clove of garlic
- 2 tablespoons of olive oil
- Salt
