The mediterranean cockerel
Instructions
Cut into four pieces the cockerels, stir-fry them with salt and sprinkle with a pinch of Saffron, causing them to cook from both sides for 3 minutes.
In the same Pan after removing the wing nut, then FRY the chopped onion and garlic, then the Eggplant Zucchini tomatoes, washed and clean cut and dice, add the chili and salt.
Cook for about 5 minutes, add the chicken and olives and finish cooking for 8 minutes.
Serve hot but not hot, sprinkled with fresh ground black pepper and chopped fresh basil.
