Gratin of berries with zabaglione
Instructions
Quickly wash strawberries, blackberries, raspberries, blueberries.
Drain the fruit.
Cut into two larger fruits.
Spread the berries on the bottom of a baking dish or in individual pans from the oven.
Prepare the zabaglione: in a saucepan, Beat egg yolks with sugar and two tablespoons of Grand Marnier.
Place the bowl in a Bain-Marie and cook at low heat stirring until the mixture thickens.
Withdrawn immediately because the zabaglione should not boil.
Flavour it with the grated rind of half a lemon.
Pour it over the fruit and place under the grill of the oven until it becomes Golden zabaglione.
Serve hot, warm or cold.

- 500 g of berries (strawberries, blackberries, raspberries)
- 3 egg yolks
- 60 g of sugar
- 1/2 lemon (zest)
- 2 tablespoons of grand marnier
