Celery Salad (Insalata di Sedani)
Instructions
Peel and browse the celery.
Use only the hearts and more tender and white edges, making sure to cut the part closest to the root.
Wash and dry thoroughly, then with a cloth or paper towel, then cut them into thin slices.
Divide half the kernels of nuts and cut the gherkins in rondelline.
In a bowl, emulsify the oil with the lemon juice, salt and pepper and a pinch of paprika.
Dilute the sauce thus obtained with the yogurt, stirring well.
Combined in a salad bowl with celery Walnut kernels and gherkins.
Seasoned gently with the prepared sauce and serve at the table.
You can decorate the preparation with a hard-boiled egg cut into wedges.

- 3 celery
- 120 g of walnut kernels
- 1 jar of natural yoghurt
- Some of pickles
- 1 pinch of paprika
- 1/2 lemon (juice)
- 6 tablespoons of olive oil
- Salt
- Pepper
