Portuguese milk
Instructions
Dissolve 50 g of sugar in very little water, let it darken and then pouring it into a mold from wet pudding.
Heat the milk with the Peel without bringing it to a boil.
Whisk 2 eggs with 3 egg yolks and remaining sugar.
Pour the hot milk over the eggs, mix well and add a pinch of salt.
Transfer the mixture into the mould and cook in a Bain-Marie for about 1 hour.
Let it cool in the fridge and pour onto a serving dish before serving.

- 50 cl of milk
- 150 g of sugar
- 5 eggs
- 1 lemon zest
- 1 pinch of salt
