Mezze penne with artichokes
Instructions
Private artichokes plugs and any Hay, cut into segments and place them as soaked in water acidulated with lemon juice so that they don't turn black.
Mandate and chop the celery, carrot and onion, then Sauté everything fresh focus for a few minutes in a pan with hot oil, stirring often.
Add the artichokes well drained, salt and pepper to taste and cook over low heat for 10-15 minutes, basting as needed, with a bit of hot water.
A couple of minutes before end of cooking add the regular sliced prosciutto and coarsely chopped Marjoram.
Boil the pasta in plenty of boiling salted water, drain well and dress with the sauce and grated Parmesan to taste.
Serve immediately.

- 350 g of type mezze penne pasta
- 4 artichokes
- 80 g of sliced ham
- 1 carrot
- 1 onion
- 1 stalk of celery
- Few sprigs of marjoram
- 1 lemon
- 5 tablespoons of olive oil extra virgin
- Grated parmesan cheese
- Salt
- Pepper
