Cheese Soup (Minestra di Formaggio)
Instructions
In a saucepan melt the butter with the flour.
Combine the broth, little by little, stirring often so as not to form lumps.
Let simmer in crock pot for 10 minutes covered.
Finely chop the celery and cut into slivers fontina and Dutch and unite all the soup.
Season with a pinch of nutmeg, add salt and cook for a few minutes.
Serve with grated Parmesan.
