Instructions
Clean, wash and cut carrots, celery, leeks, diced and fry them in a pan with 30 g butter; Add the thyme and bay leaf, with and continue cooking until the vegetables are well cooked.
Check the salt and, if necessary, wet with warm water.
This preparation is used to flavor shellfish preparations and white sauces.

- 100 g of carrots
- 50 g of leeks (or onions)
- 50 g of celery
- 30 g of butter
- 1/2 leaf laurel
- 1 pinch of thyme
- Salt
