Green apple mousse
Instructions
Peel and slice apples.
Put them in the mixer and reduce them in not too fine puree.
Put the puree of apples in a colander and let it drain the juice.
Mount Snow very firm egg whites with a pinch of salt and then incorporate vanilla sugar.
Transfer the Apple puree in a bowl, perfume with a few drops of vanilla extract and mix gently with the egg whites and then the cream.
Divide the mousse into 4 bowls and keep in the fridge for 30 minutes.
Ingredients and dosing for 4 persons
- 4 granny smith apples
- 4 egg whites
- 6 tablespoons of whipped
- 15 g of vanilla sugar
- Few drops of vanilla extract
- 1 pinch of salt
