Blown omelette
Instructions
Beat 3 eggs and 3 egg yolks with the Parmesan cheese and a pinch of salt.
Assemble the 3 egg whites and combine the rest with great delicacy.
Melt the butter and let it get hot, then pour in the mixture.
As soon as the eggs will be curdled, pour in thin flakes of emmenthal, fold the omelette in half, Cook for a few minutes and serve hot.

- 6 eggs
- 30 g of emmenthal cheese in thin flakes
- 30 g of grated parmesan cheese
- 50 g of butter
- Salt
