Pasta with sea urchin eggs
Instructions
Fish or purchase large sea urchins, open them in half with a pair of scissors and gently collect their eggs into a bowl.
FRY in abundant oil and chopped garlic and just Golden, remove the Pan from the heat and leave to cool the oil.
Boil the spaghetti al dente, drain well and toss in Bowl with oil, pepper, fry the eggs of sea urchins and a handful of chopped parsley.
Served hot.

- 2 cloves of garlic
- Olive oil extra virgin
- 600 g of type pasta spaghetti
- White pepper
- 1 sprig of parsley
- 60 sea urchins
- Salt
