Pasta e fasoi
Instructions
Keep the beans soak for 1 night.
Dip the pork rind in boiling water and boil 5 minutes; drain it and scrape it.
Cook the beans over low heat in 200 cl of water with the rind, chopped onion, carrot and celery, Rosemary and bay leaf.
Salt.
Once cooked pass 1/3 of the beans through a sieve and combine them with the rest.
Cook the pasta and remove from heat.
Serve in individual dishes and let cool.
Cut the rind into strips and place on the plates.
Season with pepper and raw oil.

- 200 g of lamon beans, dried
- 150 g of type pasta semolina noodles
- 150 g of pork rind
- == 1 large onion
- 1 carrot
- 1 costa of celery
- Rosemary
- Laurel
- Salt
- Pepper
- Olive oil
