Pens at the pier
Instructions
Put the fire water to the pens in a pan and put some oil and a little butter (so the butter doesn't burn) and fry the sliced onion.
Add the ham cut very fine (with the Crescent is better) stir often the ham which will not stick.
When the ham has browned and cooked good flame griottine with brandy.
Please turn off and on a low heat, add the cream, nutmeg, add salt and a bit of grated lemon zest.
Keep the sauce warm over very slow until the dough is cooked.
Meanwhile you have cooked the penne and flavour them with this sauce.

- 400 g of type pasta penne (or mezze penne)
- 100 g of ham
- 1 onion
- Nutmeg
- Salt
- Brandy
- Cream
- Olive oil
- Butter
- Lemon juice
