Fry the fish (washed and gutted) floured lightly in hot oil.
In 2 tablespoons of olive oil to dry minced garlic and parsley with sliced vegetables; season with salt; pepper.
Add wine, zest, tomato, a little butter, 2-3 tablespoons of water, then fish.
Cook covered for 5 minutes and then thicken the broth.
Serve over polenta.
