Marinated swordfish with shaved parmesan cheese, mint and pears
Instructions
Make a marinade with wine, lemon, Juniper, sugar and salt.
Lay over the fish cut thin and let marinate for 20 minutes.
Cut the PEAR in half and cutting it, open it out flat on placing the swordfish carpaccio.
Combine the Parmesan cheese and season with olive oil, mint and lemon juice.
