Pyramid of meringues at the cafe
Instructions
Attach the clear snow, firmly stir the coffee and sugar and blend the clear ramming well.
Pour the mixture into a syringe for pastry with fork to stella and formed with this small meringues onto a baking plate already with greaseproof paper.
Put in oven at 120 degrees for 2 hours until the meringues are dry and crumbly.
To serve arrange on a platter with a layer of meringues covered with grape and almond cream, continue to build up in a pyramid scheme going on starting with grapes and chocolate.

- 4 egg whites
- 60 g of instant coffee powder
- 450 g of sugar
- 50 cl of already whipped double cream
- 200 g of black grapes cut in half without seeds
- 200 g of white grapes cut in half without seeds
- 100 g of sliced almonds
