Cook chicken in water with the wine, onion, carrot and salt for about 1 hour and 30 minutes.
Cool the chicken in broth.
Clean the anchovies, drain the tuna and pass them to the mixer with the yolks firm.
Stretch the sauce with olive oil and lemon juice.
Arrange the chicken pieces on a plate and serve with the tuna sauce.
